Protein Powder Recipe | Almond Butter Chocolate Oat Cups

Ingredients:
- 1 ½ cups rolled oats
- 1 cup smooth organic almond butter
- 2 scoops of flavorless protein powder
- ¼ cup maple syrup (optional)
- mush 2 large organic dates or 2 organic dried fig
- ¼ teaspoon of sea salt
- ½ vanilla extract or natural blueberries flavor powder (or similar natural flavor - optional)
- small bag of Fair Trade dark chocolate chips (60%+ cocoa about 4 ounces)
- 3 Tablespoons sliced almonds
Directions:
- In a medium-sized pot over medium-high heat, combine almond butter, maple syrup, vanilla extract or blueberry flavor powder. Stir the mixture until thoroughly combined. Remove the pot from heat.
- Once off the heat, incorporate whey powder, oats, and a pinch of salt into the mixture. Stir well until the oats are evenly coated.
- Take a 12-count muffin tin and distribute an equal amount of the oat mixture into each cavity. Press down firmly to form the base of each oat cup.
- Set the muffin tin aside and prepare the chocolate topping. Use a double boiler to melt chocolate chips and butter together until smooth and well combined.
- Pour an equal amount of the melted chocolate over the top of each oat cup in the muffin tin.
- Sprinkle sliced almonds on top of each oat cup for added flavor and texture.
- Place the muffin tin in the freezer and let the oat cups freeze for a minimum of 2 hours before serving.
